Fresh, creamy and zesty, my poached coconut chicken with brown rice will help keep your new years resolutions on track!
I was a bit slow to get back to healthy eating in the New Year so I have been trying to come up with fresh and healthy (but still tasty!) recipes for dinner. My poached coconut chicken brown rice is full of goodness – it has chicken breasts, coconut milk, brown rice, spring onions and coriander. Lime juice and fish sauce add depth of flavour to the sauce and peanuts add some crunch.
Poaching chicken is really just a matter of allowing the chicken to simmer in the coconut milk. To cook the poached coconut chicken evenly and quickly I cut the top half off the chicken breast to make two thin pieces of chicken. You can easily add extra flavour to the coconut sauce such as ginger, sweet chilli sauce or kaffir lime leaves.
POACHED COCONUT CHICKEN WITH BROWN RICE
Poached coconut chicken with brown rice - fresh and creamy with spring onions, coriander and lime.
- 2 chicken breasts
- 2 tsps olive oil
- 1 400ml can coconut milk
- 1 Tbsp fish sauce
- juice of 1 lime
- 1 large packet microwave brown rice
- 1/2 cup chopped spring onions
- 1/3 cup chopped coriander
- 1/3 cup roasted peanuts (optional)
Collect all ingredients and place on bench.
You will need a knife, a teaspoon, a tablespoon and a small frying pan. Collect all utensils and place on bench
Prepare ingredients – chop spring onions, chop coriander and cut the top half off each chicken breast to make 4 thin pieces if chicken.
Heat oil in frying pan over medium heat.
Cook chicken breast pieces for 1 minute either side.
Add coconut milk , fish sauce and bring it to the boil before reducing the heat to low.
Cook the chicken in the coconut liquid for 8 minutes stirring occasionally.
Test the chicken is cook by removing the thickest piece of chicken and cutting to ensure it is white and cooked through. Slice chicken into small pieces.
Add lime juice to coconut sauce.
Cook brown rice as per instruction on packet.
Place brown rice in a bowl. Top with spring onions, chicken pieces and coconut sauce.
Garnish with coriander and peanuts if desired.
