A refreshing and festive cocktail is just what Santa ordered – my Pimms cranberry cocktail will really help to get you in the Christmas spirit!
It is hard to believe this is the first alcoholic cocktail recipe I have ever posted on The Purple Ladle. I am a HUGE fan of Pimms No. 1 since my days living in London so my Pimms cranberry cocktail is perfect for my first Purple Ladle cocktail! I love the bitter flavour of Pimms, which is so good combined with sweet mixers and fruit.
My Pimms cranberry cocktail is made with soda water and cranberry juice. It has lime juice, mint and raspberries, which make it super refreshing. If you like sweet cocktails then you can easily replace the soda water with lemonade. I use frozen raspberries to help make the Pimms cranberry cocktail extra cold. You can also add any fruit in place of the raspberries – strawberries are a classic with Pimms.

PIMMS CRANBERRY COCKTAIL
- 1/3 cup Pimms No. 1
- 2/3 cup cranberry juice
- 1/2 cup soda water
- Juice of 1/2 lime
- 6 frozen rasberries
- 3 leaves mint chopped
- Ice to serve
- Combine Pimms, cranberry juice and soda water together then add lime juice.
- Add raspberries and mint.
- Serve in a large glass with ice.
