We all love a fuss free and tasty salad that pairs with any meat or fish – my easy lentil salad is your ultimate quick weeknight dish!
It is not easy coming up with new versions of salads to pair with your chicken, red meat or fish. I don’t like to have the same salads every week so am always trying new combinations of ingredients. My easy lentil salad has loads of flavour but you can whip it up in no time. It has peppery rocket, red onion, cherry tomatoes and salty feta cheese combined with lentils. I use canned lentils which is a super quick way to get lentils into your diet!
You may like to add some posted nuts to your salad for a bit of extra crunch – my suggestions is walnuts or pine nuts. You can easily turn my easy lentil salad into lunch for the next day – why not add some chicken and mayonnaise and put it into a wrap?
- 1 425g can brown lentils drained
- 1/4 red onion thinly sliced
- 15 cherry tomatoes halved
- 2 cups rocket
- 100 grams feta cheese crumbled
- 1 Tbsp olive oil
- 1/2 Tbsp white wine vinegar
- salt and pepper
Collect all ingredients and place them on the bench.
You will need a knife, chopping board and a tablespoon for this recipe. Collect utensils and place them on bench.
Prepare all ingredients - drain lentils, chop onion and tomatoes and crumble feta.
Place lentils, onion, tomatoes, rocket and feta together in a bowl and mix gently to combine.
Add olive oil, vinegar, salt and pepper and mix gently.
